Winemaker Dinner with COURSEY GRAVES

On the steep, rocky slopes of Bennett Mountain, COURSEY GRAVES was founded by Cabell Coursey, Owner Winemaker. Planted at an elevation rising from 800’ to 1500’, the 45-acre Graves Vineyard Estate is dedicated to Cabernet Sauvignon, Cabernet Franc, Petit Verdot, Merlot, Malbec, Syrah, and Viognier. Consistent marine influences, an abundance of sunshine, and volcanic soils create ideal conditions for showcasing every varietal’s purest
flavors. Each wine is the culmination of Cabell’s daily decisions, actions, and sometimes lack of action, that unlock the vineyard’s highest potential. It is a quest to reveal the greatest qualities of each varietal through balanced, ecological farming methods and natural, noninterventionist winemaking strategies. But, “at the end of the day,” Cabell says, “we just make wine that we love to drink from a place we love to be.”

Chef-Owner of BLACKBARN restaurant, John Doherty, has an impressive background, including a 30 year legacy at the Waldorf Astoria where he met and fed 4 standing Presidents of the United States, authored The Waldorf-Astoria Cookbook, and received the prestigious James Beard Silver Spoon Award. From attending the prestigious Culinary Institute of America and graduating with the Richard Keating award for the student most likely to succeed, to being appointed Executive Chef of the Waldorf Astoria kitchen at the tender age of 27, Chef Doherty has consistently pushed himself to pursue excellence in all aspects of his career. He has also cooked for more presidents and world leaders than any other chef in history.

He officially opened his own restaurant, BLACKBARN, in September of 2015, with a menu that features modern twists on traditional fare and fresh, locally sourced ingredients. In late 2017, he expanded to Chelsea Market with partners Mark and Kristen Zeff, where his signature farm to table favorites are complemented by a homewares and accessories shop. BLACKBARN shop, cafe, and bar encompasses their shared vision for a lifestyle defined by luxury. In addition to this expansion, Chef Doherty has also created Heavenly Harvest Foundation to make healthy, shelf stable meals for families in need. From humble beginnings, he has become more than a Chef/Restaurateur: Chef John Doherty is now a channel to bring light to others.

Dan Kluger is the chef/owner of Loring Place. Born in New York City, he has worked all over. He gained prominence at ABC Kitchen as the executive chef. While he was there, he won multiple awards including the 2011 James Beard Award for Best New Restaurant, as well as being honored as Food and Wine Best New Chef of 2012. In 2013, he added another ABC restaurant to his resume, ABC Cocina, leading both Kitchen and Cocina as the Executive Chef. In 2014, he was nominated for a James Beard Award for Best Chef New York City.

Saul Bolton was born in Cleveland, Ohio, but began his career in Portland, Oregon cooking at the Hawthorne Street Café. After a move to Boston, Saul worked for James Beard Award-winning chef Gordon Hamersley, and soon thereafter, met his wife Lisa. After working for Hamersley, Saul and Lisa moved to New York City where Saul worked for world-renowned chefs David Bouley and Eric Ripert. In 1999, Saul and Lisa opened the namesake Saul Restaurant in Boerum Hill, Brooklyn, during which time Saul garnered and maintained a Michelin star (‘05-’13), two stars from The New York Times, and  a score of 27 for Food in the Zagat survey. In 2010, Saul opened The Vanderbilt, and in 2013, Red Gravy. Saul is also owner of  Brooklyn Bangers, an artisanal sausage company, which he started in 2011. Today, Saul continues on as the Executive Chef of Saul Restaurant, which has moved to a new home in the Brooklyn Museum.
